When thinking of fall and the holiday season, there is a certain comfort that comes with cozy baked goods- especially pies. A Thanksgiving staple for many families is pumpkin pie, apple pie, and pecan pie. While these pies are delicious- they are filled with many not so delicious ingredients such as corn syrup, lots of unnecessary added sugar, GMO ingredients, and more. If you want a somewhat guilt free desert to indulge in, we reccoment these clean and simple pecan pie bars! The original recipe can be found here , but we added a slight variation to it!
Shopping List:
1 1/3 cup Almond Flour
1 cup Coconut Sugar
2/3 cup Coconut Oil
2 eggs
1 cup Pecans
Vanilla Extract
Pure Maple Syrup
Salt
Cinnamon (optional)
Directions:
Preheat your oven to 350 degrees
Start making the crust: combine 1 1/3 cup of almond flour, 1/3 cup of melted coconut oil, 1/2 cup of coconut sugar, a pinch of salt, 1 1/4 tsp vanilla extract, + 1 tbsp in a bowl and mix together
Once mixed, line a square baking dish with parchment paper or grease it with butter
Pour the mixture into your baking sheet and pat down firmly until flat-Bake for 18 minutes in the oven or until golden brown
While the crust is baking, start on the filling: combine 1/3 cup of melted coconut oil, 1 cup of pecans, 1/2 cup coconut sugar, 1/4 cup of pure maple syrup, 1 1/4 tsp of vanilla extract, and 2 eggs in a bowl and mix until combined
Remove the crust from the oven and let cool for a few minutes, once cooled pour the filling mixture evenly on top of the crust
Bake in the oven for 15-18 minutes or until set
Remove from oven and let cool for a few minutes then place in the refrigerator to cool the bars further
Once the bars are cooled, mix together equal parts cinnamon and coconut sugar and sprinkle on top (optional), cut into squares and enjoy!
